Any ideas for tasty low fat vegetarian fillings for baked potatoes?
Baked potato fillings?
I like to take the baked potato, cut them in half being careful and scoop it out, place the skins to the side. Your going to need them, so don't toss them out.
You then put that into a bowl and make like you would mashed potato - margarine, spices (I like garlic and chives myself - but whatever you prefer).
You then put it BACK into the skin half's. You can put cheese on top if your diet allows (soy if you don't do dairy) - a few grinds from the pepper mill on top - then back in the oven to melt it all.
You can have on the table chopped onions, broccoli, any veggie that you like on the table chopped and ready for them to be put on top of the potato in the way that each person is going to want.
I have fixed these up ahead of time and even frozen them to use later and everyone that has had them really loves them.

Reply:I bake my potatoes and then cut them open and put onions and cheese on the inside and bake for about 15 more minutes, people seem to love them. If grilling is an option they are even better that way..

3) just cheese, soured cream/flavoured yoghourt. Don't be afraid to try SWEET fillings for baked potatoes. Potatoes are actually a neutral thing and you can swing the pendulum towards sweet or savory (that is, unless you want to avoid sweetness!)
ALL of the potato is good for you - especially the skin and what is 2-3mm under it! You can add almost anything you fancy to make it more palatable. My 'weakness', though is butter! I figure that it does no harm if I have other good things with it!
