Veg fillings for spring rolls?

I am instant looking various options for fillings in to spring roll wraps (I have wraps available)

Veg fillings for spring rolls?
Cut in the julienne style or grated.





Any veggie, the list is endless. I particularly like the combinations of:





Carrots


Cucumbers


Water Chestnuts


Shittake Mushrooms


Lemongrass


Bamboo Shoots


Coriander





.

Reply:sprouts, julienned veggies (beets, carrots, turnips, green and red peppers), onions, grated parsnips, spring onions.....
Reply:I use precut coleslaw without the dressing, snow peas cut on the diagonal, frozen chopped broccoli, a diced red pepper, mushrooms and some shredded carrots.
